Want to try something different this year? Add some crunch to your butter cookie recipe with poppy seeds! These cookies are now a staple in our Christmas cookie sampler plate. The dough can easily be made in advance and stored in the freezer, and the cookies make a great homemade gift!
Ingredients
3/4 cup of sugar
1 cup of butter (room temperature)
1 egg
Vanilla extract, to taste
2 cups all-purpose flour
1/2 cup of blue poppy seeds
1/4 teaspoon salt
Instructions
Cream butter and sugar using a wooden spoon, or an electric hand mixer.
Add egg and vanilla, and mix until smooth.
Mix in flour, salt and poppy seeds.
Divide dough in half and mold into two logs.
Cover and refrigerate for a few hours. This is where you can freeze the dough for future use!
Preheat the oven to 325 degrees F.
Slice the logs about 1 cm thick and bake at 325 F for about 12 minutes or until the edges start to brown.
